Kale Salad

Ingredients 

2- LARGE HEADS OF CURLY KALE
-1/4-CUP-SLIVERED ALMONDS
1Ž4-CUP-SLIVERED-RAW BEETS(a cheese grater works)
1-CARROT-SHREDDED ON CHEESE GRATER

SALAD DRESSING-
1Ž4-cup-TAHINI or PEANUT BUTTER-OPTIONAL
1-CUP-COCONUT WATER or REGULAR WATER
1Ž4-CUP-LIME JUICE W/ZEST
2-GARLIC CLOVES
1-FRESH GINGER SLICED-1 INCH THICK
2-TBLS.-TAMARI or SOY SAUCE
4-PITTED DATES-SOFTENED with water
1Ž4-TEAS.-RED PEPPER FLAKES

Instructions

BLEND ALL INGREDIENTS-TILL SMOOTH
REMOVE THICK STEMS-DISCARD
RUB KALE TO SOFTEN-(MASSAGED)
IN A LARGE BOWL- POUR DRESSING
ADD REMAINING INGREDIENTS-EXCEPT ALMONDS

THE LONGER THIS SITS WITH DRESSING
THE BETTER IT TASTES-ADD ALMONDS BEFORE SERVING.
The dressing can be used to dip vegetables as well~
