Not even Hollywood Hot Moms can resist ice cream sundaes! Gwyneth Paltrow raves about them, Trista Sutter makes them for Father’s Day, Kelly Ripa builds them for charity and Katie Holmes treats daughter Suri to them for a late night snack. Ice cream sundaes are clearly a hit with Hollywood’s hottest moms.
While we all love sundaes, sometimes you need a dessert that you can prepare ahead of time and bring along to those fun summer time parties. The solution? Ice cream sundae cupcakes! These darling treats, inspired by Living Locurto, look exactly like ice cream sundaes, but are made of cupcakes and frosting. Whip up a batch for your next party, and you will be the celebrity!
You will need the following items:
1. A batch of your favorite cupcakes (approx 24), baked and cooled. You could also pick up a batch of un-frosted cupcakes from your favorite bakery.
2. Melting Chocolate, such as Wilton Candy Melts, Candiquick coating or a chocolate almond bark. Please note that using chocolate chips will not create the same results, as the chocolate will not set up. Most grocery stores carry at least one form of a chocolate disc or bark, and you can always find some at your local Michael’s or Hobby Lobby.
4. Candy to use as your “cherry on top”. Bubble gum and M&M’s are both great options.
5. Ice Cream Cups (OPTIONAL). While these cupcakes are adorable on a plate or platter, you can take it a step further and make them in ice cream cups, such as the Meri Meri Ice Cream Cups from Sur La Table.
3 Sticks Of Butter, Softened
6 Cups Of Powdered Sugar
1 Tablespoon Vanilla
3 Tablespoons Milk
1 Teaspoon Salt
Combine butter, vanilla and milk until well blended and smooth in your mixer. Slowly add powdered sugar and salt, and mix on low until just combined. Increase speed to medium and beat for a minute or two, until fully combined and fluffy. Place frosting in the refrigerator for an hour to chill. If you are pressed for time, 20 minutes in the freezer works just as well.
After your frosting is prepared and chilled, the next step is to spoon it on to your cupcakes. A small ice cream scoop works well, but you can also use a cookie dough scoop, or even a regular spoon. Scoop out a generous portion of frosting and top each cupcake.
After you have topped your cupcakes with frosting, you will want to melt your chocolate. Follow the directions on the package, and after you have melted your chocolate, let it cool for a few minutes (if it’s too hot, it will melt the frosting a bit). Then simply spoon some chocolate on top of each cupcake, and let it drizzle down the sides a bit.
Immediately after drizzling on the chocolate, add your sprinkles and your cherry on top, before the chocolate starts to harden. Let the cupcakes set up for approximately one hour. After that your treats are ready to eat, or to be given away as special treats. Enjoy!
