IMG_0027As a kid, I used to adore St. Patty’s Day – always making sure to don something green and to keep an eye out for those who hadn’t, so they could get a pinch from me. I loved the day because, it falls close to my dad’s birthday, you get to eat yummy green food and it’s a total festival of fun.

*Special note to those suffering from thyroid disease, the colcannon is a goitrogen bomb! The goitrogenic ingredients are well cooked however so you could be fine. If you’re watching the amount of goitrogens you consume, you may want to swap the Kale for Chard and Cauliflower or New Potatoes in the pesto and colcannon.
