Peanut Butter, the Super Fiber (no sugar) Peanut Butter Sandwich that kids will eat. Kids are severely lacking in proper fiber intake these days. I’ve struggled with that with my own girls and tried to figure out how to increase the fiber without making the kids eat cardboard and tree bark.
I found the solution in of all places the bread aisle and made an old reliable packed full of fiber and nutrients without the sugar. Yes, you read that right–no sugar and my girls can’t eat them fast enough.
The Super Fiber Peanut Butter Sandwich
2 Slices of Double Fiber Bread (Nature’s Own or Pepperidge Farm–it’s still soft and doesn’t taste like you’re eating cardboard)
Smart Balance Omega Natural Peanut Butter (creamy or crunchy)
1/4 Cup Blueberries (or whatever raw fruit you want–this replaces the jelly)
Sprinkle of cinnamon (helps with the motility of the intestines)
This will give your child about 15 grams of fiber in one sitting. That’s almost their entire day’s worth of fiber in one sandwich!
The fresh fruit brings out the natural flavors of the peanut butter. This sandwich your kids will ask for again and again.
To give your child variety, change around the fruits and use fresh peaches, cherries, sliced grapes, strawberries, apples, raspberries or kiwi.
