Potato Leek Soup – Dairy Free (Recipe)
If you are looking for a soup that your whole family will love this Potato Leek soup will be a HUGE HIT! Celebrity moms like Gwennyth Paltrow and Alicia Silverstone are well known to have Vegan lifestyles. This recipe was adapted to be Dairy free or Vegan but you may easily add to dairy if you prefer.
Potato Leek Soup
6 – 8 large red potatoes
2 leeks (dark green section removed)
1 large pinch Himalayan salt, plus additional for seasoning
1 tsp pepper or more to flavor
2 cloves of chopped Garlic
2 tbs earth balance margarine or coconut oil
1 cup coconut water
1 cup vegetable broth
1/2 or 1 cup of Coconut milk ( choose how creamy you want it to be)
Chop the leeks into small pieces. In a 6-quart saucepan over medium heat, melt the earth balance. Add the leeks and salt, chopped garlic and sweat for 5 minutes. Decrease the heat to medium-low and cook until the leeks are tender, approximately 25 minutes, stirring occasionally.
Add the potatoes and the vegetable broth and coconut water… increase the heat to medium-high, and bring to a boil. Reduce the heat to low, cover, and gently simmer until the potatoes are soft, approximately 45 minutes.
Turn off the heat and puree the mixture with an immersion blender until smooth. Stir in the Coconut milk, buttermilk, and pepper. Taste and adjust seasoning if desired. Sprinkle with chives and serve immediately, or chill and serve cold.
