Spotted Tori Spelling’s Ice Cream Cone Cupcakes.  When we saw Tori carrying these adorable ice cream cone cupcakes, we had to whip up some of these sweet treats ourselves!   What a fun treat for those 4th of July barbeques and picnics.   They are easy to make, and here is how…
You will need your favorite cupcakes, frosting, sprinkles and waffle cones.  You can make your cupcakes and frosting from scratch, a mix or ready made – each will work.  You can also add chocolate to the cones and top by using chocolate melts, such as Wilton’s Melts.    A few small cups make great holders to put the cones in while you are frosting the cupcakes.
How to make cupcakes:
1. 1 box of cake mix and one package of cupcake cones.
2. Mix the cake mix together and then pour  a little more then halfway into the cone ( the cake will rise)
3. Place in a cupcake pan like this from Kupcake Conz or you can use a cookie sheet.
Bake accordingly to cake mix recipe.
For easy frosting, put your frosting in a Ziploc bag, which you can cut a corner off of and use as a piping bag.Start with putting an unwrapped cupcake into a waffle cone.  Add a bit of frosting to the the cupcake and cover the front area of the cupcake, to help hide the cupcake in the waffle cone.   Next, pipe some of your frosting on to the cupcake, swirling as you go.    After that, add your sprinkles and you are good!   If you will be serving your ice cream cone cupcakes immediately after making them, you could even use Redi-Whip topping in place of the frosting, making it even quicker and easier.    If you want to take your ice cream cones up a notch, you can dip your waffle cone into the Wilton’s Melt, add sprinkles and let it dry prior to adding the cupcakes.   After topping with frosting, you can drizzle on a bit more of the Wilton’s Melts, to create the look of chocolate sauce on top.
While you can use any frosting, one of our favorite chocolate frosting recipes from Hershey’s makes a delicious choice…
Rich Chocolate Frosting
1 stick of butter, melted
2/3 cup of unsweetened cocoa (regular or dark chocolate)
3 cups of powdered sugar
1/3 cup of milk
2 teaspoons vanilla extractCombine melted butter and cocoa.   Add in powdered sugar, milk and vanilla.   Beat with a mixer until desired consistency is reached.   In order to suit your tastes, you may want to add a bit more powdered sugar or milk.    Makes approximately two cups of rich, chocolatey frosting.
